Rich is bringing lamb, spinach, and broccoli. Just needs olive oil and spices. We'll see what more we can also do.
To start, roasting broccoli and sweet potatoes and doing the sundried tomato walnut fantastic garnish or whatever.
Some sort of coconut milk curry:
bamboo shoots?
and a stir fry with:
zucchini
olives
My plan on the curry, modify Indian Coconut Curried Vegetables:
Ingredients:
* 1 onion, chopped (light on or skip the onion... too sugary, +1 allergen... scallions (green onions) have a little less carbs, 4g for half a cup instead of 5g)
* 1 tbsp fresh ginger
* 1green chili, seeded
* 1 tbsp vegetable oil
* 1/2 tsp turmeric
* 1/2 tsp coriander
* 1 tsp cumin
* 1 tsp curry
* 1/2 cauliflower, chopped
* 1 zucchini, sliced
* 1 cup coconut milk
(took out the garlic, green bean, and carrots.)
Preparation:
Process the onion, garlic, ginger and chili in a food processor until smooth.
In a large skillet, heat the onion mixture and spices along with the oil and spices. Allow to cook for a minute or two, stirring frequently.
Add the vegetables and the coconut milk and stir well.
Cover and allow to cook for at least 20 minutes, or until veggie are tender.
Serve over rice if desired.
